Setting a Chamber Vacuum Sealer in Millibars
A chamber machine does not suck air out of a bag. It drops the pressure of the whole box the bag is lying in, seals the bag at that pressure, then lets the room back in. Because the number on the control panel is the absolute pressure left inside the chamber, it is written in millibars — and every recipe note, machine manual and packaging specification you compare it against may use bar instead.

Enter the set point in millibars
Put 5, 30, 150 or whatever the panel is showing into the left box; the bar value appears without waiting for a button. Type the decimal mark as a comma if that is how your keyboard is laid out, and do not worry about extra spaces.
Compare it with the room
Sea-level air is about 1013 mbar, or 1.013 bar. Seeing a 30 mbar cycle written as 0.03 bar makes the size of the drop obvious: you have taken away around 97 % of the gas, not 30 % of anything.
Copy it into the production log
The small copy control beside each box places the number alone on the clipboard, free of units and spacing, ready for an HACCP sheet or a recipe card. The keyboard shortcut Ctrl + C inside a field behaves identically.
Go the other way for a spec sheet
Pump manufacturers often quote ultimate pressure in bar. Tap ↔ and the page runs bar → mbar, where the multiplier is a plain 1000: an 0.002 bar rating is a 2 mbar machine.

Read down the bar column and the whole useful range of the machine sits between two thousandths and a quarter of one bar. That compression is exactly why the panel counts in millibars: three decimal places of bar would be unreadable at a wet bench.

Small numbers stay readable
Results carry up to eight decimals and slide into scientific notation when a value drops below a millionth, so a 2 mbar cycle never rounds away to zero.
Vacuum Packing Questions
Why does the panel ask for a pressure in mbar instead of a vacuum percentage?
A percentage is measured against the air in the room, which changes with the weather and drops as you climb. Ninety-nine per cent of 1013 mbar is 10 mbar at the coast, but ninety-nine per cent of 900 mbar high in the mountains is 9 mbar — different packs from the same setting. An absolute figure in millibars removes that ambiguity, which is why professional machines print it and why repeatable recipes are written that way.
My stock started bubbling in the chamber before the bag was sealed — what happened?
It reached its boiling point. Water boils whenever the surrounding pressure falls to its vapour pressure, which is around 23 mbar at 20 °C and about 74 mbar at 40 °C. A cycle heading for 15 mbar sails straight past both. Either chill the liquid first — at 4 °C the threshold is near 8 mbar — or raise the set point so the pump stops above it.
Does a deeper vacuum really marinate meat faster?
What the cycle does is pull dissolved gas out of the tissue and open the structure; when the room air comes back the marinade is drawn into the space it left. That is a physical effect on the surface layers, not a shortcut through a thick cut, and running several shorter cycles at around 30 mbar usually beats one long deep pull. Salt and acid still need their own time to travel.
What actually happens to a piece of watermelon at 5 mbar?
The gas trapped between the cells expands enormously as the chamber empties, blows those cell walls apart, and then the returning air presses the flesh flat into the space that used to hold air. The fruit comes out denser, deeper in colour and almost glassy, and it will weep juice more freely afterwards, so drain or dress it soon. Cucumber, apple and pineapple behave the same way.
How much oxygen is left in a bag finished at 10 mbar?
Around one per cent of what was in there at the start. Ten millibars out of 1013 is roughly a hundredth of the original gas, and since air is close to 21 % oxygen, the oxygen partial pressure falls from about 212 mbar to near 2 mbar. That is enough to slow oxidation and freezer burn markedly, but it is not sterility — chilling, hygiene and the usual date controls still do the real work.
