Quarts to Liters

Turns quart-rated jars, stockpots, slow cookers and canners into litres, so an American preserving recipe fits the kitchenware you already own.

A Quart Jar, a Litre Jug and the Gap Between Them

It is preserving season, the recipe promises "makes seven quarts", and the jars stacked on your counter are stamped 1 L. The two numbers look like the same thing until you multiply them out: seven quarts is 6.62 L, so seven litre jars would leave you scraping the last of the batch into an eighth jar you never sterilised.

The same mismatch turns up on the cookware shelf. American pots, slow cookers and pressure cookers wear a quart badge; the ones sold in a metric market carry a litre figure that almost never lands on the same round number. A 6-quart slow cooker is 5.68 L, which is why it sits awkwardly between a 5.5 L and a 6 L model rather than matching either.

Conversion factor: 1 US quart = 0.946352946 L, so multiply quarts by 0.9464. A 12-quart preserving pan is 12 × 0.946352946 = 11.36 L, and a quart jar holds 946.4 mL filled to the very brim.

Where the Two Capacity Systems Meet on the Counter

Jars are sold by name, not by volume

A preserving jar is a half-pint, a pint, a quart or a half-gallon. Translated, those are 236.6 mL, 473.2 mL, 946.4 mL and 1.893 L — none of which appears in a European jar catalogue.

Pot ratings are measured to the rim

The quart figure stamped on a stockpot is what it would hold filled to overflowing. Leave the depth you need to stop a rolling boil climbing out and the usable volume drops well below it.

Appliances keep the quart badge

Slow cookers and pressure cookers are marketed in 4, 6 and 8 quarts. Those are 3.79 L, 5.68 L and 7.57 L, so a dish written for a 6 L pot is already too big for the middle size.

Headspace claims part of every jar

Canning instructions reserve a measured air gap under the lid so contents can expand and a seal can form. Whatever the jar is called, what goes inside it stops short of that figure.

Sizing Jars, Pans and Canners Before You Start

Do the arithmetic the evening before, while the shopping list is still open. Once the fruit is macerating and the water bath is heating, the last thing you want to discover is that the pan will not take the batch.

Enter the quart figure from the recipe or the box

Match the result to jars you actually own

Divide the litre total by the capacity of your jars to get a jar count, then add one spare. Batches rarely finish on an exact jar, and a part-filled jar goes in the fridge rather than the canner.

A jar's name is not its working capacity. Fill levels for canning come from the tested recipe, not from the label on the box. Convert the size so you buy the right jars, then follow the recipe's headspace instruction for how much actually goes in.

A boiling-water canner is the other vessel worth converting. The common 21-quart size works out at 19.87 L, and it earns that height by taking a rack of seven quart jars with enough water above the lids to keep them covered for the whole processing time.

Rounding cuts one way: calling a quart a litre inflates every capacity by 5.7%. Across a 23-quart canner that is more than a litre of imagined space — roughly the margin you need for the water sitting above the jars.

Canning Jar and Cookware Capacity Questions

Does a quart preserving jar really hold a quart of food?

Filled to the very top edge it holds a little more than 946.4 mL, because makers allow some overflow room above the shoulder. What goes in is another matter: every tested canning recipe reserves an air gap under the lid, so food and syrup together stop short of the rim. Treat the quart name as a shelf size for buying and stacking, and let the recipe decide the fill line.

How much headspace should I leave under the lid?

Follow the tested recipe, but the usual pattern is a quarter of an inch (about 6 mm) for jams and jellies, half an inch (about 12 mm) for fruits, tomatoes and pickles going into a boiling-water bath, and one to one and a quarter inches (25 to 32 mm) for low-acid foods in a pressure canner. That gap is not spare room; it is where air is driven out so a vacuum can form as the jar cools. Too little and the contents siphon past the lid, too much and the air may not clear.

Can I treat a quart and a litre as the same size when scaling a batch?

For a single jar the 53.6 mL difference vanishes into the headspace and nobody notices. Over a batch it stops being invisible: a yield of seven quarts is 6.62 L, and twenty quarts is 18.93 L rather than 20. Buy jars on the litre figure and you end up a jar short roughly every nineteen quarts. Convert once at the top of the recipe and the jar count comes out right.

What size canner do I need for seven quart jars?

Seven quart jars is the standard single-layer load, and canners are built around it. A 21-quart boiling-water canner (19.87 L) takes that rack and still leaves depth for an inch or two of water over the lids. On the pressure side the 23-quart size (21.77 L) is the usual choice, and it will double-stack smaller pint jars where a quart load can only go one layer deep. Whatever the size, it has to be tall enough for jars plus rack, not merely wide enough.

My inherited preserving book is British — is its quart the American one?

Almost certainly not. British and pre-metric Canadian books use the imperial quart of 1.1365225 L, forty imperial fluid ounces against the American thirty-two. That is a fifth more in every jar, so a four-quart batch swings from 3.79 L up to 4.55 L. If the book was printed in Britain, or in Canada before the 1970s changeover, or if it also talks in gills, assume imperial and convert on that basis.

The quart as a kitchenware size

A US quart is 0.946352946 L, two US pints or four US cups. It names preserving jars, stockpots, slow cookers and canners far more often than it names an amount of liquid, which is why the number usually arrives stamped on a box rather than written in a recipe.

Litres on the metric kitchen shelf

Metric cookware is sold in round litres — 3.5, 5.5, 8, 11 — and preserving jars in 250 mL, 500 mL and 1 L. None of those match a quart exactly, so converting first tells you which neighbouring size to buy and how much capacity you gain or lose.
