Hitting the Right Mark When the Recipe Is Written in Millilitres

The recipe came from a French pâtisserie blog, a Korean cooking channel or a German cookbook, and the liquids are all in millilitres — 150 mL here, 300 mL there. Your drawer holds a nested American cup set that steps in quarters, and your jug is marked in cups on one side. The question is never the arithmetic; it is which mark to stop pouring at.

Conversion factor: 1 mL = 0.004226753 US cup, and 1 cup = 236.5882365 mL — so divide millilitres by 236.588. A recipe asking for 300 mL of stock is 300 ÷ 236.588 = 1.268 cups, which is the 1¼-cup mark plus a splash.

Why the Two Scales Never Quite Agree

Metric recipes are written in round tens

Authors working in millilitres choose friendly numbers — 50, 100, 150, 200, 250, 500. None of them is a whole number of US cups, because the two systems were never designed to meet.

A cup set only steps in quarters

Your scoops go ¼, ⅓, ½, ⅔, ¾, 1 — steps of roughly 59 mL. Anything that falls between two of them has to be built by stacking a smaller scoop or a tablespoon on top.

Packaging arrives in metric sizes too

Cream, stock, coconut milk and yoghurt come in 200, 250, 500 and 1,000 mL packs. Knowing that a 500 mL carton is 2.11 cups tells you at the shelf whether one is enough.

The usual gap is small, but not always

Treating 240 mL as one cup is 1.4% out. Treating 250 mL as one cup is 5.7% out — the same error repeated on every cup, which is where a batter starts behaving differently.

Type the millilitre figure exactly as printed

Enter 150, 237,5 or 1 000 — a comma is accepted as the decimal separator and spaces are ignored, so a European-style number pasted straight from the page still works.

Read the decimal, then pick your scoops

0.25 is a quarter cup, 0.33 a third, 0.5 a half, 0.67 two thirds, 0.75 three quarters. A result of 1.27 means one full cup plus a quarter, with a touch left over that you can ignore or top up with a spoon.

Send the remainder to the spoon list

Change the right-hand unit to tablespoons and re-enter the leftover millilitres. One US tablespoon is 14.79 mL, so most awkward remainders resolve into one, two or three spoonfuls.

Turn it around to check a scoop

The swap button (↔) runs cups → mL, which answers the opposite question: what does my half-cup scoop actually deliver? Multiply by 236.588 to do it in your head — a half cup is 118.29 mL.

Errors add up in one direction. Rounding every cup down by a few millilitres is fine once, but a recipe with five cup measures in it drifts the same way five times. If the total matters, convert the total.

Notice the pattern in the top half: every plain fraction lands about 1.4% short, because the round metric number is really the 240 mL label cup in disguise. The two rows that need a spoon on top — 250 mL and 500 mL — are the ones where dropping to the nearest cup costs you 13.4 mL and 26.8 mL.

How many millilitres make one cup?

236.5882365 mL for the US cup that American recipes and cup sets use. Working backwards, one millilitre is 0.004226753 of a cup, so 100 mL is 0.423 cup and 200 mL is 0.845 cup. Most kitchen writing rounds the cup to 237 mL, which is close enough for anything you stir.

The mL and cup marks on my jug do not line up — which side is wrong?

Neither. The cup scale is printed at true US cup intervals of 236.59 mL, so the 1-cup line sits between the 200 and 250 mL lines rather than on one of them. If your jug's 1-cup line does sit exactly on 250 mL it was made for a metric cup, and you should trust one scale and ignore the other for the whole recipe.

Can I just call 250 mL one cup?

For soup, stew, braising liquid or a marinade, yes — you are 13.4 mL short and nothing cares. For bread dough, custard, pancake batter or anything where hydration sets the texture, no: that is 5.7% less liquid every time, and across four cups you have lost 53.6 mL. Add a tablespoon per cup and the shortfall disappears.

How many cups is 500 mL?

2.113 cups. Two level cups gets you to 473.18 mL, leaving 26.8 mL — call it two tablespoons less a splash. A 500 mL carton is the size that trips people up most, because "half a litre" feels like it ought to be a round two cups and it is not.

When should I put the jug down and use a scale instead?

The moment the metric recipe switches from mL to grams. Continental recipes weigh nearly everything, including liquids, and a scale is the faster route: water, milk and stock are close enough to 1 g per mL that you can pour straight into the bowl on the scale and skip the cups altogether. Honey, oil and syrup are not — weigh those to their own gram figure.
